Ingredients
  

  • 1 head cauliflower (about 1½ lbs), cut into bite-sized florets, dried well
  • ½ cup all-purpose flour
  • ¼ cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ cup milk
  • ¼ cup buffalo sauce
  • 2 tbsp unsalted butter, melted
  • Cooking spray

Method
 

  1. Preheat air fryer to 400°F. In a large bowl, whisk flour, cornstarch, garlic powder, onion powder, salt, and milk until smooth.
  2. Add cauliflower florets to the bowl and toss to coat evenly, letting excess drip off. Spray basket with oil, then arrange florets in a single layer; mist tops lightly with oil.
  3. Air fry at 400°F for 12-15 minutes, shaking halfway, until golden and crisp.
  4. Stir buffalo sauce and melted butter together. Toss hot cauliflower in the sauce and serve immediately.

Notes

Works best with fresh cauliflower; frozen gets watery. The coating is crispiest right after saucing, so don’t let the florets sit too long. If you need to make this ahead, keep the sauce and cooked cauliflower separate until serving.
