Ingredients

  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup whole milk
  • ¼ cup unsalted butter, melted and slightly cooled
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Method

  1. Preheat air fryer to 350°F (175°C). In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In a medium bowl, whisk milk, melted butter, egg, and vanilla until smooth.
  3. Pour wet ingredients into dry. Stir until just combined, then gently fold in blueberries.
  4. Divide batter among 6 silicone muffin cups, filling each about ¾ full. Air fry at 350°F for 12 to 15 minutes, until a toothpick inserted comes out clean.
  5. Cool in the cups for 5 minutes, then turn muffins out onto a wire rack. Serve warm.

Notes

If your air fryer has a strong fan, cover the muffin cups loosely with a small piece of foil for the first 5 minutes to prevent over-browning, then remove it. For the tallest rise, make sure your baking powder is no older than six months.
