Ingredients

  • 3 very ripe bananas, mashed
  • ½ cup packed light brown sugar
  • 1 large egg, room temperature
  • ¼ cup melted unsalted butter, cooled
  • 2 tbsp buttermilk
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp cinnamon (optional)
  • ¼ tsp fine sea salt

Method

  1. Mash the bananas in a large bowl. Whisk in the brown sugar, melted butter, egg, buttermilk, and vanilla until combined.
  2. Sprinkle the flour, baking soda, cinnamon, and salt over the wet ingredients. Fold with a spatula until just no dry streaks remain.
  3. Preheat the air fryer to 320°F (160°C). Pour the batter into a greased 6-inch round pan and bake for 20 to 25 minutes, rotating halfway through, until a toothpick comes out with moist crumbs.
  4. Cool the loaf in the pan for 10 minutes, then turn out onto a rack and cool another 10 minutes before slicing.

Notes

If you don’t have a 6-inch round pan, a small loaf pan that fits your air fryer basket works; see the timing table in the tips section above. Let the loaf cool before slicing—it’s fragile when hot.
