Ingredients

  • 1 (16 oz) can refried beans
  • 2 tbsp taco seasoning
  • 1 cup sour cream
  • 2 ripe avocados
  • 1 tbsp fresh lime juice
  • ½ tsp salt
  • 1 cup thick salsa, drained
  • 2 cups shredded Mexican blend cheese
  • ½ cup diced roma tomatoes, seeded
  • ¼ cup sliced black olives, drained
  • 2 green onions, thinly sliced
  • Scoops or tortilla chips for serving

Method

  1. Stir refried beans and taco seasoning together in a bowl, then spread into a 9-inch pie dish in an even layer.
  2. Spread the sour cream gently over the beans, keeping the layer distinct.
  3. Mash the avocados with lime juice and salt, then spread over the sour cream.
  4. Spoon drained salsa over the avocado, then top with cheese, tomatoes, olives, and green onions. Serve with chips.

Notes

For the cleanest look, drain the salsa well and spread each layer without pressing down. The dip tastes best assembled within 2 hours of serving. Cover and refrigerate if making ahead, but note the avocado may darken a bit.
