7 Can Taco Soup Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 (1 oz) packet taco seasoning
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can sweet corn, drained
  • 1 (15 oz) can tomato sauce
  • 1 (15 oz) can chicken broth

Method
 

  1. Cook 1 lb ground beef in a large pot over medium-high heat, breaking it up, for 6-7 minutes until no pink remains.
  2. Stir in the taco seasoning and 1/2 cup water, scraping up browned bits, and let bubble for 2 minutes.
  3. Add all the canned ingredients (beans, tomatoes, corn, tomato sauce, and chicken broth), bring to a boil, then simmer uncovered for 15-20 minutes.
  4. Ladle into bowls and top with cheese, sour cream, crushed tortilla chips, and pickled jalapeƱos.

Notes

Leftovers thicken overnight, so add a splash of broth when reheating. If you want the soup thinner right away, stir in an extra half can of broth during the simmer.
