- Preheat oven to 350°F (175°C). Line a baking sheet with parchment. Stir peanut butter, maple syrup, and egg until smooth.
- Add protein powder, oat flour, baking soda, and salt; fold to combine. Fold in chocolate chips.
- Scoop dough onto sheet, press on extra chips, and bake 10 to 12 minutes until edges are golden and centers look underdone. Cool on pan 5 minutes.
Notes
If the dough feels too dry while mixing, add 1 tablespoon of milk to bring it together. Chilling the dough for 20 minutes yields a thicker cookie, but the recipe works either way.
