Ingredients

  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp minced garlic
  • 1 tbsp grated fresh ginger
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 2 (6-oz) steaks (sirloin, ribeye, or flank)

Method

  1. In a small bowl, whisk soy sauce, brown sugar, garlic, ginger, sesame oil, and rice vinegar until the sugar dissolves.
  2. Place steaks in a resealable bag, pour in the marinade, seal, and marinate at least 30 minutes at room temperature (or refrigerate up to 4 hours, turning once). Remove steaks 20 minutes before cooking.
  3. Heat a grill or cast-iron skillet over high heat. Sear steaks for about 4 minutes per side for medium-rare, or until an instant-read thermometer reads 130°F.
  4. Transfer to a cutting board and rest 5 minutes. Slice against the grain, spoon any juices over the top, and serve.

Notes

The 30-minute marinating time is hands-off and not counted in the prep. If you marinate in the fridge, let the steak come to room temperature for about 20 minutes before cooking so it sears evenly. For thicker steaks, increase cooking time slightly and use the internal temperature guide in the table above.
