- Whisk together BBQ sauce, apple cider vinegar, brown sugar, smoked paprika, salt, and pepper in the slow cooker.
- Add chicken and turn to coat. Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours, until very tender.
- Transfer chicken to a cutting board, shred with two forks, then return to the sauce. Simmer on HIGH, uncovered, 10 minutes to thicken.
- Toast buns under broiler 1-2 minutes, pile on chicken, add extra sauce and slaw, and serve.
Notes
Don’t lift the lid during cooking—it releases steam and adds time. If using breasts, check for doneness at 6 hours on low to prevent dryness. For extra smoky flavor, add a couple drops of liquid smoke to the sauce.
