- Preheat the oven to 350°F (175°C). Beat the butter, 1/2 cup powdered sugar, vanilla, and salt until light and fluffy, about 2 minutes.
- Add the flour and mix on low just until the dough comes together, being careful not to overmix.
- Roll level tablespoonfuls of dough into balls and place on parchment-lined baking sheets. Bake 12 to 14 minutes, until the bottoms are barely golden. Cool on the sheets for 5 minutes.
- Pour the 1 cup powdered sugar into a bowl. Toss the warm cookies in the sugar to coat, then cool completely on a rack. Roll once more after cooling for a thicker finish.
Notes
For the snowiest look, do the second sugar coating right before serving. If the cookies sit for a day, the outer layer may absorb a little, but the texture inside stays tender.
