Ingredients
  

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch cubes
  • 1 cup plain Greek yogurt
  • 3 tbsp olive oil
  • 3 tbsp freshly squeezed lemon juice
  • 3 garlic cloves, minced
  • 1 tbsp dried oregano
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper

Method
 

  1. Whisk the yogurt, olive oil, lemon juice, garlic, oregano, salt, and pepper in a large bowl until smooth.
  2. Add the chicken, toss to coat, cover, and refrigerate at least 20 minutes or up to overnight.
  3. If using wooden skewers, soak them in water for 30 minutes first. Thread the chicken onto skewers, leaving space between pieces.
  4. Preheat grill or broiler to high. Cook skewers 10 to 12 minutes, turning once, until charred and the internal temperature hits 165°F.
  5. Transfer to a platter, squeeze fresh lemon over the top, and serve immediately.

Notes

Marinating overnight gives a deeper flavor, but 20 minutes still delivers. Let the chicken sit at room temperature for 20 minutes before grilling for more even cooking. Metal skewers save prep time and help the chicken cook from the inside.
