Ingredients
  

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter, melted
  • 2 cups powdered sugar
  • 1½ cups gluten free graham cracker crumbs
  • 10 oz semi-sweet chocolate chips
  • Flaky sea salt, for topping (optional)

Method
 

  1. In a large bowl, stir the peanut butter and melted butter until smooth. Add the powdered sugar and graham cracker crumbs, mixing until a thick dough forms.
  2. Press the mixture firmly into a parchment-lined 8x8-inch pan, taking about a minute to pack it down evenly.
  3. Melt the chocolate chips in the microwave, stirring in 30-second bursts until smooth. Pour over the base, spread to the edges, and sprinkle with flaky salt if using. Refrigerate at least 1 hour.
  4. Lift the bars out using the parchment, cut into 16 squares, and serve cold.

Notes

The bars need at least 1 hour to set, but they slice cleanest after 2 hours in the fridge. Store leftovers in an airtight container in the refrigerator. For a nut-free version, use sunflower seed butter and check that your graham crumbs are nut-free.
