- In a small bowl, stir together smoked paprika, garlic powder, onion powder, salt, and pepper to make the seasoning.
- Pat chicken dry and coat with olive oil. Sprinkle seasoning evenly over both sides and pat to adhere.
- Heat a skillet over medium heat, add a thin film of oil if needed, and sear chicken 6 to 7 minutes per side until golden and 165°F.
- Let rest 5 minutes, slice against the grain, and serve with pan juices.
Notes
If your chicken breasts are very thick, pound them to an even ¾-inch thickness before seasoning. This ensures they cook through without drying out on the outside. For the most accurate results, use an instant-read thermometer.
