Ingredients

  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 4 boneless, skinless chicken breasts (6–8 oz each)
  • 1 tbsp olive oil, plus more for pan

Method

  1. In a small bowl, stir together smoked paprika, garlic powder, onion powder, salt, and pepper to make the seasoning.
  2. Pat chicken dry and coat with olive oil. Sprinkle seasoning evenly over both sides and pat to adhere.
  3. Heat a skillet over medium heat, add a thin film of oil if needed, and sear chicken 6 to 7 minutes per side until golden and 165°F.
  4. Let rest 5 minutes, slice against the grain, and serve with pan juices.

Notes

If your chicken breasts are very thick, pound them to an even ¾-inch thickness before seasoning. This ensures they cook through without drying out on the outside. For the most accurate results, use an instant-read thermometer.
