Ingredients
  

  • 2 large very ripe bananas (about 1 cup mashed)
  • 2 cups old-fashioned rolled oats
  • ½ cup creamy peanut butter
  • ⅓ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine salt
  • ½ cup mini chocolate chips

Method
 

  1. Mash the bananas in a large bowl until mostly smooth.
  2. Stir in the peanut butter, honey, vanilla, cinnamon, and salt until combined, then mix in the oats until evenly coated.
  3. Fold in the chocolate chips.
  4. Press the mixture firmly into a parchment-lined 8-inch square pan. Bake at 350°F (180°C) for 18 to 22 minutes, until the edges are golden and the top looks set.
  5. Cool completely in the pan on a wire rack, about 1 hour, then lift out and slice into 12 bars.

Notes

Cooling the bars fully is what keeps them from crumbling. If you are short on time, pop the pan in the fridge for 30 minutes after it comes out of the oven, then slice.
