Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 (4 oz) can diced green chiles
  • 1 tbsp ground cumin
  • 1 tsp dried oregano
  • 1 chipotle pepper in adobo, finely chopped, plus 1 tsp adobo sauce
  • 2 (15 oz) cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 tsp kosher salt
  • To serve: sour cream, cilantro, lime wedges

Method
 

  1. Heat the oil in a large pot over medium-high. Add the turkey, break it up, and cook until no longer pink, about 5 minutes. Push to one side of the pot.
  2. Add the onion, garlic, cumin, oregano, and chipotle with adobo to the empty side. Sauté 3 to 4 minutes, then stir everything together.
  3. Pour in the broth, beans, green chiles, and salt. Bring to a boil, then reduce the heat and simmer, half-covered, for 15 minutes. Smash some beans against the pot for a thicker chili if you like.
  4. Ladle into bowls, top with sour cream and cilantro, and serve with lime wedges.

Notes

If you’re making this ahead, the chili will thicken as it cools; add a splash of broth when reheating to bring back the right consistency. The chipotle adds a gentle, smoky warmth, not aggressive heat, so don’t be shy with the adobo sauce.
