30-Minute Tilapia Bowls Recipe

Ingredients
  

  • 4 tilapia fillets (about 4 oz each)
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 2 tbsp olive oil
  • 2 cups cooked white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels, thawed
  • 1/2 small red onion, finely diced
  • 1 cup halved cherry tomatoes
  • 1 ripe avocado, sliced
  • 1/2 cup sour cream
  • 1 lime, juiced
  • 1/4 cup chopped fresh cilantro, plus more for garnish
  • 1 small jalapeño, sliced thin (optional)

Method
 

  1. Mix chili powder, cumin, smoked paprika, and salt. Season both sides of the tilapia.
  2. Stir together sour cream, lime juice, a pinch of salt, and cilantro to make the crema.
  3. Warm black beans and corn in a skillet with a splash of water until steaming; season with salt.
  4. Heat olive oil in a skillet over medium-high. Sear tilapia 3-4 minutes per side until golden and flaky.
  5. Divide rice among bowls, top with beans, corn, fish, avocado, tomatoes, onion, and jalapeño. Drizzle with crema and garnish with cilantro.

Notes

If your rice is not already cooked, start it first so it finishes right when the fish is done. The spice rub and crema can both be prepped ahead to make assembly even faster during the week.
