- Cut chicken into bite-size pieces. Dip in beaten eggs, then coat in cornstarch seasoned with salt and pepper. Set aside.
- Heat oil in a skillet over medium-high. Fry chicken in a single layer, 3-4 minutes per side, until golden and cooked through. Drain on paper towels.
- Whisk together ketchup, vinegar, soy sauce, sugar, garlic powder, and ginger in a bowl.
- In the same skillet, sauté peppers and onion for 2-3 minutes until just softened.
- Pour in the sauce, simmer 1-2 minutes until thick, then return the chicken and toss to coat. Serve immediately.
Notes
The sauce thickens quickly once it hits the heat, so have everything ready before you start Step 5. If you want a saucier dish, double the sauce ingredients and reserve a little on the side for drizzling over rice.
