Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 packet (1 oz) taco seasoning
  • 1 cup long-grain white rice, rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes, undrained
  • 1 3/4 cups low-sodium chicken broth
  • 1 cup frozen corn kernels
  • 1 cup shredded Mexican blend cheese
  • Salt and pepper
  • For serving: lime wedges, chopped cilantro, sour cream, diced avocado, salsa

Method
 

  1. Brown the beef with onion and a pinch of salt in olive oil over medium-high heat until no pink remains, about 5 minutes. Drain excess fat.
  2. Stir in garlic, tomato paste, and taco seasoning. Cook 1 minute until fragrant.
  3. Add rice, beans, tomatoes, broth, and corn. Bring to a simmer, then cover and cook on low for 18-20 minutes until rice is tender.
  4. Remove from heat, top with cheese, cover, and let melt for 3 minutes.
  5. Fluff with a fork, squeeze lime over the top, scatter cilantro, and serve with desired toppings.

Notes

For fluffier rice, let the pot sit covered off heat for 5 minutes before removing the lid. If using brown rice, increase broth to 2 cups and simmer for 30-35 minutes.
