- Heat the oil in a large pot over medium heat. Add the onion and cook, stirring occasionally, for about 5 minutes until soft. Stir in the garlic and cook 1 minute more.
- Add the broccoli, broth, salt, pepper, and nutmeg. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 10 minutes until the broccoli is very tender.
- Carefully transfer the soup to a blender, add the cottage cheese, and blend for about 30 seconds until completely smooth. Return the soup to the pot.
- Set the pot over low heat. Pour in the milk and stir while adding the cheddar a handful at a time until fully melted and smooth, about 2 to 3 minutes. Do not boil. Ladle into bowls, top with extra cheddar and black pepper, and serve hot.
Notes
For a thinner soup, add a splash more milk or broth when reheating. The soup will thicken as it cools. Grating your own cheese gives the creamiest, smoothest texture.
