30-Minute Coconut Curry Lentil Soup Recipe

Ingredients
  

  • 1 tbsp coconut oil or neutral oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 ½ tbsp curry powder
  • ½ tsp ground turmeric
  • A pinch of cayenne pepper
  • 1 cup dried red lentils, rinsed
  • 4 cups vegetable broth
  • 1 (13.5 oz) can full-fat coconut milk
  • Juice of 1 lime
  • Salt to taste
  • Fresh cilantro leaves, for garnish

Method
 

  1. Heat oil in a large pot over medium heat. Add onion and cook until soft, about 5 minutes. Stir in garlic and ginger, cook 1 minute.
  2. Add curry powder, turmeric, and cayenne. Cook, stirring, for 30 seconds.
  3. Stir in lentils and broth. Bring to a boil, then cover and simmer on low for 15 to 20 minutes, until lentils are tender.
  4. Pour in coconut milk and lime juice. Warm through for 2 minutes, then season with salt.
  5. Ladle into bowls, top with cilantro, and serve hot.

Notes

For a slightly thinner soup, add ½ cup extra broth during simmering. The soup will thicken as it sits; stir in a splash of water when reheating.
