30-Minute Black Bean Burrito Recipe

Ingredients
  

  • 2 (15 oz) cans black beans, drained and rinsed
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 4 large burrito-size flour tortillas
  • 1 cup shredded cheese
  • Toppings: sour cream, diced avocado, salsa, chopped cilantro, lime wedges

Method
 

  1. Heat oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes, then add garlic and cook 30 seconds.
  2. Add black beans, cumin, smoked paprika, chili powder, and salt. Cook, stirring, for 3 to 4 minutes until heated through and fragrant.
  3. Warm tortillas in a dry skillet or microwave so they are pliable.
  4. Spoon bean mixture down the center of each tortilla, top with cheese, fold sides over, then roll from the bottom up. Serve immediately with toppings.

Notes

If you have leftover rice, add a few spoonfuls to the burritos for extra heft. The beans can be made up to 2 days ahead and reheated before assembling. This recipe doubles easily to feed a crowd.
