  • 1 (15.25 oz) box strawberry cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Stir together the cake mix, eggs, and oil in a bowl until smooth.
  2. Scoop rounded tablespoons of dough onto the sheet 2 inches apart. You will have about 24 cookies.
  3. Bake for 10 to 12 minutes until edges are set and tops crack slightly.
  4. Cool on the sheet for 5 minutes, then move to a wire rack to cool completely.

Notes

The dough comes together fast, but if it feels too sticky to scoop, chill it for 15 minutes. These cookies taste best the day they are baked but stay soft for days in a sealed container.
