Ingredients
  

  • 2 large ripe bananas
  • 1 cup creamy peanut butter
  • 1 1/2 cups rolled oats
  • 1 tsp vanilla extract (optional)
  • 1/2 cup chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the bananas in a mixing bowl until mostly smooth with a few small lumps.
  3. Stir in the peanut butter until the mixture is glossy and uniform.
  4. Fold in the oats, vanilla, and chocolate chips (if using) until everything is coated.
  5. Drop heaping tablespoon-sized mounds onto the sheet and flatten slightly.
  6. Bake for 10 to 12 minutes, until the edges are set and the tops look dry.
  7. Cool on the sheet for 5 minutes, then transfer to a rack or serve warm.

Notes

These cookies are best the day they’re made, but they keep in an airtight container for a few days. If the dough feels too sticky to scoop, chill it for 10 minutes first. The cookies don’t brown much, so watch the edges instead of relying on color.
