3-Ingredient Meatballs Recipe

Ingredients
  

  • 1 lb ground beef, 85% lean
  • 1/2 cup grated Parmesan
  • 3 tbsp basil pesto

Method
 

  1. In a large bowl, gently mix the ground beef, Parmesan, and pesto until just combined.
  2. Roll the mixture into about 20 meatballs, roughly 1 1/2 inches wide.
  3. Heat 2 tbsp olive oil in a large skillet over medium-high. Sear the meatballs in two batches, 2 minutes per side (8 minutes per batch), until deeply browned. Transfer to a plate.
  4. Return all meatballs to the skillet, add 1 1/2 cups marinara sauce, and simmer for 5 to 7 minutes, turning once, until cooked through and coated in sauce.

Notes

These meatballs don’t need extra salt since the Parmesan and pesto bring enough on their own. If you like a richer sauce, let them bubble gently for the full 7 minutes. For a green sauce variation, thin 2 tbsp pesto with 1/2 cup water and use that in place of marinara.
