Ingredients
  

  • 8 oz elbow macaroni
  • 2 cups whole milk
  • 8 oz sharp cheddar cheese, shredded
  • Salt and freshly ground black pepper, to taste

Method
 

  1. Place the macaroni and milk in a medium saucepan over medium heat. Bring to a gentle simmer, stirring occasionally.
  2. Reduce the heat to maintain a low simmer and cook, stirring often, until the pasta is tender and most of the milk is absorbed, about 8 to 10 minutes.
  3. Remove the pan from the heat. Add the cheese, salt, and pepper. Stir until the cheese is melted and the sauce is smooth, then serve right away.

Notes

The sauce thickens as it sits, so this mac and cheese is best served the moment it’s ready. If you need to hold it for a few minutes, keep it covered off the heat and stir in a splash of milk just before serving.
