- In a large bowl, combine the dried fruit and orange juice. Cover and leave to soak for 30 minutes until the fruit is plump and most of the liquid is absorbed.
- Preheat the oven to 325°F (160°C) and line a 9x5-inch loaf pan with baking paper. Fold the flour into the soaked fruit until no dry spots remain, then scrape the mixture into the prepared pan and smooth the top.
- Bake for 50 to 60 minutes, until a skewer inserted in the centre comes out clean. Let the cake cool in the pan for 10 minutes, then lift it out onto a wire rack to cool completely before slicing.
Notes
If you don’t have self-raising flour, use 1 cup (150g) plain flour plus 2 teaspoons baking powder. For extra flavour, stir 1 teaspoon of mixed spice or cinnamon into the flour. This cake tastes even better the next day after the flavours settle.
