- Sauté beef, onion, and garlic in olive oil on the Instant Pot’s sauté setting until browned, about 6 minutes. Drain fat, then stir in rice, diced tomatoes with juices, 1/2 cup tomato sauce, Italian seasoning, salt, and pepper.
- Cut tops off peppers, remove seeds and membranes, and slice a flat spot on the bottom if needed. Pack the beef mixture tightly into each pepper.
- Pour water into the pot and insert a trivet. Place stuffed peppers upright, spoon remaining 1/2 cup tomato sauce on top, and pressure cook on High for 4 to 5 minutes with a 5-minute natural release.
- Remove lid, top peppers with mozzarella, and broil on a baking sheet for 2 to 3 minutes until bubbly and golden. Or close the lid off heat for 3 to 4 minutes to melt the cheese.
- Lift peppers out with tongs, spoon over sauce from the pot, and serve hot.
Notes
If your peppers are especially large, you may have a little extra filling; just pack it in or serve it alongside. The broiler step is optional but gives you that irresistible browned-cheese top. If you don’t have cooked rice on hand, start a small pot while the Instant Pot comes to pressure; it’ll be ready by the time you need it.
