20-Minute Vegetarian Charcuterie Board Recipe

Ingredients
  

  • 8 oz soft cheese (Brie or Camembert)
  • 6 oz aged cheddar
  • 3 oz blue cheese
  • 1 cup seedless red grapes
  • 1 crisp apple
  • 1 firm pear
  • ¼ cup dried apricots or figs
  • ⅓ cup roasted almonds
  • ⅓ cup candied pecans or walnuts
  • 1 cup assorted crackers or sliced baguette
  • 3 tbsp fig jam or honey
  • Small handful fresh herbs (rosemary, thyme, or mint)

Method
 

  1. Slice the apple and pear into ¼-inch wedges, tossing apple slices in lemon juice if making ahead. Halve any large grapes.
  2. Place the cheeses on a large board with at least 3 inches between them. Cut a small wedge from the Brie if desired.
  3. Scatter roasted almonds and candied pecans in small piles near the cheeses, filling the gaps.
  4. Spoon fig jam or drizzle honey into a ramekin or directly onto the board near the soft cheese.
  5. Tuck fresh herb sprigs into empty spaces, then set out the crackers. Serve right away.

Notes

Let the cheeses sit at room temperature for 20 minutes before building the board so they spread and taste their best.
