20-Minute Vegan Fried Rice with Crispy Tofu Recipe

Ingredients
  

  • 14 oz extra-firm tofu, pressed and cubed
  • 3 cups cooked and cooled jasmine rice
  • 3 tbsp vegetable oil, divided
  • 2 cloves garlic, minced
  • 1 tbsp minced fresh ginger
  • 1 cup diced carrot
  • 1 cup diced red bell pepper
  • ½ cup frozen peas, thawed
  • 2 scallions, sliced, white and green parts separated
  • 3 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • Pinch red pepper flakes

Method
 

  1. Heat 2 tbsp oil in a large skillet over high heat. Add tofu in a single layer; let cook undisturbed 3-4 min until golden. Flip and cook 2-3 min more, then transfer to a plate.
  2. Reduce heat to medium-high, add remaining 1 tbsp oil, then garlic, ginger, and white scallion parts. Stir constantly 30 sec until fragrant.
  3. Add carrot and bell pepper; stir-fry 2-3 min over high heat. Add peas and cook 1 min, then push veggies to the side.
  4. Drizzle more oil if needed, add rice, spread in an even layer. Let sit 2 min without stirring to crisp, then toss. Press again for 1 min if desired.
  5. Pour sauce over rice, add tofu and green scallions, toss 1 min until glossy. Serve immediately, topped with sesame seeds.

Notes

If your tofu needs pressing, do that first while you prep the vegetables; the 10-minute wait counts as hands-off time. For extra smoky flavor, let the rice char slightly before tossing.
