- Season the chicken with salt and pepper, pressing it into the meat.
- Heat the oil in a skillet over medium-high. Sear the chicken until golden and an instant-read thermometer reads 165°F, about 4 minutes per side, then transfer to a plate.
- Whisk the gochujang, soy sauce, honey, garlic, ginger, and water in a small bowl.
- Pour the sauce into the skillet and simmer for 1 to 2 minutes until thickened. Return the chicken and any juices, then spoon the sauce over the top and cook for 1 minute, flipping once.
- Slice the chicken, plate with extra sauce from the pan, and serve.
Notes
Use a thermometer to hit 165°F exactly; that keeps the meat from drying out. If the sauce thickens too much before you add the chicken, stir in a tablespoon of water to loosen it. Leftover sauce from the pan is great drizzled over rice.
