Ingredients
  

  • 6 large eggs
  • 8 oz asparagus, trimmed and cut into 1 inch pieces
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp whole milk
  • 1 tbsp olive oil
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat broiler with rack 6 inches from heat. Heat oil in a 10 inch oven safe skillet over medium heat. Add asparagus and a pinch of salt, cook 3 to 4 minutes until bright green and tender crisp.
  2. Whisk eggs, milk, half the Parmesan, salt, and pepper. Pour over asparagus, tilt to distribute, and top with remaining Parmesan.
  3. Cook on medium heat 3 minutes until edges set, lifting to let liquid egg run underneath. Cook 1 minute more until bottom is golden and center jiggles slightly.
  4. Broil 2 to 3 minutes, watching closely, until puffed and golden. Cool 1 minute, then slice and serve warm.

Notes

Broil times vary by oven, so keep a close eye after 2 minutes to avoid burning. This frittata can be made ahead and served at room temperature, which makes it great for a party or packed lunch.
