- Toss the sliced beef with 1 tbsp soy sauce and 1 tbsp cornstarch, then set aside while you prep the vegetables.
- Whisk the 3 tbsp soy sauce, brown sugar, sesame oil, beef broth, and cornstarch slurry in a small bowl until smooth.
- Heat oil in a wok over high heat. Sear the beef in a single layer for 2 minutes per side, working in batches, then remove to a plate.
- Stir fry the vegetables for 2 to 3 minutes. Add garlic and ginger and cook 30 seconds more.
- Return the beef to the pan, pour in the sauce, and toss for 1 minute until thickened. Top with green onions and sesame seeds and serve immediately over rice.
Notes
The sauce thickens quickly once it hits the hot pan, so have everything ready to toss. For a little heat, stir a teaspoon of gochujang or sriracha into the sauce before pouring it in.
