Ingredients
  

  • 4 chicken breast cutlets (about 1 1/2 lb total), pounded to 1/4 inch
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 tbsp olive oil, divided
  • 2 tbsp unsalted butter, divided
  • 2 garlic cloves, minced
  • 1/2 cup low-sodium chicken broth
  • 2 tbsp fresh lemon juice
  • 1 tbsp chopped fresh parsley

Method
 

  1. Pound the cutlets to an even 1/4 inch thickness between two sheets of plastic wrap. Season both sides with salt and pepper.
  2. Sear 2 cutlets in 2 tbsp hot olive oil over medium-high heat for 2 to 3 minutes per side until golden and 165°F. Repeat with remaining oil and cutlets.
  3. Lower heat to medium. Melt 1 tbsp butter, add garlic, and cook 30 seconds. Add broth and lemon juice, scraping the pan. Simmer 1 to 2 minutes, then stir in remaining butter and parsley.
  4. Return cutlets to the skillet, spoon sauce over them, and warm through 30 seconds. Transfer to plates, pour over remaining sauce, and serve.

Notes

If your cutlets are unevenly pounded, the thicker sections may need an extra 30 seconds of cooking. For an even juicier result, pull them at 160°F and let carryover cooking bring them to 165°F while you finish the sauce.
