- Pound the chicken to ½-inch thickness, then season both sides with salt, pepper, garlic powder, and smoked paprika.
- Stir together mayonnaise, garlic, lemon juice, and a pinch of salt to make the garlic mayo.
- Heat olive oil in a large skillet over medium‑high. Sear chicken for about 4 minutes per side until golden and 165°F. Rest for 3 to 5 minutes.
- Toast the split buns cut‑side down in the same skillet over medium heat for about 1 minute until crisp.
- Spread garlic mayo on the buns, layer with lettuce, tomato, onion, and chicken. Close and serve immediately.
Notes
Pound the chicken to an even thickness; this is the only way to get it juicy and done at the same time as the crust. If you don’t have smoked paprika, the sandwich still tastes great without it. For extra flavor, rub a cut garlic clove on the toasted bun before spreading the mayo.
