Ingredients

  • 1 ½ cups white whole wheat flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • 1 large egg
  • ½ cup plain nonfat Greek yogurt
  • ¼ cup unsweetened applesauce
  • ¼ cup skim milk
  • 1 tablespoon melted coconut oil or canola oil
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh blueberries

Method

  1. Heat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. Whisk the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. In a separate bowl, whisk the egg, then stir in the yogurt, applesauce, milk, oil, and vanilla until smooth.
  4. Pour the wet mixture into the dry mixture and fold just until combined; a few lumps are fine.
  5. Gently fold in the blueberries with a few turns of the spatula.
  6. Scoop batter into the prepared tin, dividing it evenly. Bake 18 to 20 minutes, until golden and a toothpick comes out clean. Cool in the pan 5 minutes, then transfer to a rack and serve warm.

Notes

Let the muffins rest in the pan for those 5 minutes after baking. This helps them release from the liners and keeps the bottoms from steaming and getting soggy.
