10-Minute Thai Peanut Satay Sauce Recipe

Ingredients
  

  • 1 tbsp vegetable oil
  • 1 small shallot, minced (about 2 tbsp)
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 2 tbsp Thai red curry paste
  • 1 cup full-fat coconut milk
  • ⅓ cup creamy peanut butter
  • 1 tbsp soy sauce
  • 1 tsp light brown sugar
  • 2 tbsp fresh lime juice
  • 2 tbsp crushed roasted peanuts, for garnish
  • 1 tbsp chopped fresh cilantro, optional

Method
 

  1. Heat the oil in a small saucepan over medium heat. Add shallot, garlic, and ginger; cook until fragrant, about 1 minute.
  2. Stir in the curry paste and cook 30 seconds. Whisk in coconut milk, peanut butter, soy sauce, and brown sugar until smooth. Simmer gently for 4 to 5 minutes, stirring often, until the sauce thickens.
  3. Remove from heat and stir in lime juice. Spoon into a serving bowl, garnish with crushed peanuts and cilantro, and serve warm.

Notes

Leftover sauce thickens as it cools. Reheat gently with a splash of water or coconut milk to loosen it. The flavour deepens overnight, so this is a great make-ahead condiment.
